Chef Supervisor

ESS Defence delivers the best hospitality and support services to Defence sites across Australia. From dining facilities to field operations, our teams ensure Defence personnel receive consistent, high quality meals that support their wellbeing and performance every day.

We are seeking an experienced and confident Chef to join our team supporting the Australian Defence Force through our ESS business. This is a hands-on leadership role suited to a chef who enjoys leading teams, maintaining high standards, and delivering quality food in a structured Defence environment.

Role Location:
Randwick Barracks, Randwick NSW

Your responsibilities will include:

Leading and supporting a kitchen team to deliver high quality daily meals and functions
Overseeing catering operations including food safety, stock control and compliance with OH&S and HACCP standards
Managing menu execution, food forecasting, ordering and waste minimisation
Ensuring strong allergen management and compliance with dietary requirements

What we’re looking for:

Certificate III in Commercial Cookery as a minimum
Experience in a Head Chef or Chef Supervisor role in a high volume or structured environment
Confident leadership skills with experience training and developing teams
Strong knowledge of HACCP, food safety and allergen management
Well organised, proactive and able to manage competing priorities
Ability to obtain and maintain a National Police Check and Defence clearance
