Located in the heart of Applecross overlooking the Swan River, Raffles Hotel is a well-known, high-volume venue with a strong food and beverage offering across bistro, bar and functions. We’re on the hunt for a hands-on Head Chef to lead the kitchen, drive consistency, and continue building a strong team culture.

The Role
As Head Chef, you’ll have full responsibility for the back-of-house operation, leading the team through busy services while maintaining quality, consistency and strong kitchen systems.
You’ll be responsible for:
Leading and managing the kitchen team day-to-day
Delivering consistent, high-quality food across all service periods
Rostering, labour control and food cost management
Ordering, stock control and supplier management
Maintaining food safety and compliance standards
Training, developing and mentoring your team
Working closely with the Venue Manager on business performance and menu direction
What We’re Looking For
Proven experience in a leadership role – At least 2–5 years’ experience as a Head Chef or Sous Chef, with a track record of managing teams and delivering consistent food quality
Strong knowledge of food safety & compliance – Up-to-date knowledge of food safety standards (HACCP) and experience maintaining compliance with health regulations
Team leadership & kitchen management skills – Ability to lead, train and motivate staff, manage rosters, control food costs and run an efficient kitchen under pressure
Experience in high-volume bistro, pub or function environments
Strong organisational and communication skills
Hands-on leadership style with a positive, team-first attitude
